Beef Carpaccio!

Since starting Cooking Tuesdays one of the main highlights has been getting to know the local fish mongers and the local butchers very well, they are cheery and so willing to help if you have a question or would like advice on what is the best option for a particular recipe. Last nights attempt was a classic example of when the advice from your local butcher can be a key part to making your dish a success. He gave us some lovely, fresh, melt in your mouth meat for us to use for this recipe and it paid off.
